Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/4 cup sugar
  • 1 tsp yeast
  • 1/2 tsp baking powder
  • 1 tbsp vegetable oil

For the Filling:

  • 4 Ouh-Mami sausages, chopped
  • 1/2 cup finely chopped green onions
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp ground white pepper

Instructions:

1. Prepare the Dough:
  1. In a small bowl, dissolve the sugar in warm water, then add the yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine the flour and baking powder. Make a well in the center and pour in the yeast mixture and vegetable oil. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

2. Prepare the Filling:

  1. In a pan, heat a little oil and sauté the chopped Ouh-Mami sausages until slightly browned.
  2. Add the green onions, soy sauce, hoisin sauce, sesame oil, sugar, and white pepper. Cook for another 2-3 minutes. Remove from heat and let it cool.

3. Assemble the Bao:

  1. Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball, then flatten into a disc about 3 inches in diameter.
  2. Place a spoonful of filling in the center of each disc. Gather the edges of the dough around the filling, pinching them together to seal.
  3. Place each bao on a piece of parchment paper, seam side down.

4. Steam the Bao:

  1. Arrange the baos in a steamer, leaving some space between each one to allow for expansion.
  2. Cover and steam over boiling water for about 15 minutes. Remove from heat and let them sit for 5 minutes before serving.

If you’re short on time or prefer convenience, you can always opt for high-quality frozen bao. Simply steam them according to the package instructions, and enjoy the deliciousness without the prep!
